Lemon Chicken, Beetroot & Carrot Salad

Would you believe that this is the first salad I’ve ever made?! Somewhat embarrassing, I know. This is my very first meal of my elimination diet that I have put on by my doctor, and it was a total impromptu recipe that turned out surprisingly really well!

When I made this, I wanted something super quick and easy; and something that didn’t need much thought (or ingredients). What I’ve learnt is lemon will go good with anything, and that for salad, I need to double.

Vegan Beetroot Burgers

Now, I’m usually not a fan of burgers, but beetroot peanut butter burgers? I could positively eat them everyday!

My first introduction to beetroot burgers was at a local joint here – my husband was ordering from this new burger place, and I saw they had a beetroot burger. Since I’m not a fan of burgers, I chose the beetroot burger. Why not? I love beetroots (as you may know, especially in beetroot juice), it sounded interesting, so I thought I’d try it.

ABC Beetroot Juice

If you’re new to juicing, you may feel a bit intimidated of the vast amount of fruits you suddenly realise there are. “What goes with what?” “Wouldn’t that taste nasty together…?!” It can all be a bit of a head spin, not knowing what to do or what goes with what. I’ve certainly been there.

Luckily there’s the classic ABC beetroot juice, which, as its name can attest really is as easy as your ABCs and looks and tastes absolutely delicious and is so good for you — especially for our blood. It’s almost as if the deep, rich reddish-purple colour of beetroot (the star ingredient of the ABC juice) is a sign that it helps our blood… it certainly mimics the look of it!

As it turns out, beetroot boasts many blood health benefits: it’s packed with essential nutrients such as iron, manganese, potassium, folate and Vitamin C. Its numerous blood benefits include increased blood flow and lowering blood pressure. It also helps your blood platelet count to rise, which the case for me.
