Green Protein Smoothie

This green smoothie is packed with protein… a perfect start of the day, and so delicious too.

I created this on a whim many years ago and it’s something my family and I still enjoy. In fact, this was my then-toddler’s first time trying spinach, and I was one happy mama when I gobbled this up (in a bowl, then), and said he loved it! he still loves it to this day and so do I.

Banana Bread (Gluten-Free)

Every family needs a banana bread recipe… here’s ours.

For many weekday mornings, my son and I have this super simple gluten free banana bread (actually, we also like to have this lemon bread, so we kinda alternate now and again). I also like to pack it for when we go out for a snack, and it’s also great for an afternoon refuel. It’s delicious, soft, hearty and super low in sugar — so I definitely don’t feel guilty that my son and I can eat a whole loaf a day. (Which can happen, it’s that yummy.)

Healthy Banana Chocolate Chip Muffins 

Prepare to be amazed, friends! These peanut-butter-banana-chocolate-chip muffins (I know, a mouthful) are as healthy as muffins can get. They contain no flour so it’s naturally gluten-free, use natural sweeteners, barely has any sugar and are full of protein.

Best of all, they take less than 20 minutes to make including baking time. Possibly the easiest muffins of all time, and the simplest baking recipe I’ve shared thus far on the blog (another simple, healthy muffin recipe of mine is this one).

Tropical Mango Apricot Smoothie

This tropical mango apricot banana smoothie was an impromptu recipe I made one day, and it was a huge success (if I may say so myself).

The story goes like this: my mother frequently buys more “adventurous” fruits than I, from jackfruits to dragonfruits to everything in between, and is always very generous in giving me a bit of what she has. So one day we were at her home and she had “extra mangoes” (as you do) and gave me a few. And then, whilst perusing the supermarket aisle after visiting her, I chanced upon a small packet of dried apricots on sale and knew I had to add it into the smoothie.
